Dairy-Free Frothy Decaffucino Sweetened with Stevia

-1 14 oz can pure coconut milk (read the label)
-2 tablespoons strong brewed decaf coffee or espresso
-5 drops liquid stevia extract (more or less to your own liking)
-optional - 1 fresh organic egg yolk

Heat the coconut milk over a medium flame until nice and hot, but not boiling.

Add the decaf coffee.

Pour into a heat-proof blender (such as glass or stainless), add the stevia extract and the optional egg yolk and blend well.

Pour into two coffee mugs and enjoy.

Try adding a pinch of cinnamon, or a drop of vanilla extract, or a drop of almond extract.

Note - if you're trying to add some virgin coconut oil to your diet, this is a great recipe to sneak some in. Try adding a teaspoon to the mixture as you blend it. Talk about a meal in a cup - this is it.

Makes about 2 servings.
