Raw, Unfiltered Apple Cider Vinegar With The Mother Is The One To Buy

“I’ve heard that I should be getting apple cider vinegar with the mother. What the heck does that mean?”

It means: Spend your money on traditionally fermented vinegars that have not been pasteurized, filtered or distilled.

Raw unfiltered apple cider vinegar is vinegar in its natural state. It has not been distilled, clarified or refined in any way, unlike the clear vinegars you’ll see on most grocery store shelves.

There are other good natural vinegars such as raw unfiltered red wine vinegar (I can usually only find it in health food stores), and traditionally fermented & aged balsamic vinegar (you'll find this in many grocery and gourmet stores). It's probably best to avoid balsamic vinegar while candida cleansing, but its a delicious one to use when you are in good health.

You'll find raw apple cider vinegar "with the mother" at most health food stores, or in the natural section of your grocery store. Many of the brands actually say "with the mother" right on the label.

When you get apple cider vinegar with the mother, you’re getting the whole food, as opposed to a refined version of it. It’s the same principle as the difference between buying extra virgin olive oil and “light” olive oil.

Here's the deal:

Apple cider vinegar is made from crushed apples, which have been fermented into an alcoholic cider by yeasts which convert the apple sugars into alcohol, and then by lactic acid bacteria which convert the malic acid naturally present in the apples into carbon dioxide and lactic acid. This alcoholic cider is then fermented into vinegar by acetic acid bacteria.

Some of these live organisms remain in the vinegar, adding to its incredible health-giving properties (kind of like the live cultures in yogurt). When you buy raw, unfiltered apple cider vinegar it will look cloudy, not clear.

Sometimes you’ll see a little blob or stringy substance which has settled to the bottom of the bottle. That's it, that's the mother! It may look a little unappetizing, but it's totally harmless and actually desireable to have it in there!

You can find raw, unfiltered apple cider vinegar with the mother at most health food stores. It’s an inexpensive addition to your kitchen stock, and worth every penny.
